In the 10th World Convention on Stevia 2022, Mrs. Maria Rosa Zorzenon, from State University of Maringá, Brazil, will give a talk about "Spray Drying Encapsulation of Stevia Extract with Maltodextrin and Evaluation of the Properties of Produced Powders".
During her session, Mrs. Zorzenon will explain her studies that aimed to formulate and perform physicochemical and functional characterization of maltodextrin microcapsules containing ethanolic extract of stevia, rich in antioxidant compounds, encapsulated by a spray-drying process with two maltodextrins (DE10 and DE19).
